I started drinking Masumi Junmai Ginjo Karakuchi Ki-ippon after visiting Miyasaka Brewing Company for work. In front of their office, there's an impressive brewery shop where I was able to purchase sake and items like tableware as souvenirs. Masumi Junmai Ginjo Karakuchi Ki-ippon is characterized by its crisp and dry taste, which enhances the flavors of dishes. It pairs exceptionally well with mountain vegetables, vegetable dishes, and ayu (sweetfish). This sake is made using the No. 7 yeast, nurtured by the pure water and cool climate of Suwa in the Shinshu region. Its versatility in being enjoyable at any temperature is also a notable attraction.

Fukutsukasa Junmai Sake Did you know there's a sake brewery in Kushiro, Hokkaido? Kushiro City is located in the eastern part of Hokkaido, where the Kushiro Wetlands spread out, and it takes more than four hours by car from Sapporo. At its peak, there were more than ten sake breweries in Kushiro, but now the only one remaining is Fukutsukasa Brewery. The brewery is dedicated to traditional sake-making methods, with a focus on handcrafting, led by young brewers who are passionate about Fukutsukasa and committed to producing sake rooted in the local community. This Junmai sake is the most popular and classic product from Fukutsukasa. It benefits from the cool climate of Kushiro, allowing for year-round low-temperature storage, which is the secret to its unique taste that can't be found elsewhere. This sake has a traditional, handcrafted feel and is easy to drink without any strong peculiarities, making it suitable for daily enjoyment. It uses "Ginpu," a type of sake rice from Hokkaido known for its rich umami, providing a pleasant rice aroma and a smooth texture that leaves a lasting impression. In Kuriyama Town, Hokkaido, resides the renowned manager Hideki Kuriyama, who once led Japan's national baseball team, Samurai Japan, in the World Baseball Classic (WBC). The only sake brewery in Kuriyama is Kobayashi Shuzo, and among their original brand "Kita no Nishiki," the "Maruta" is particularly popular. The rice used, "Ginpu," is one of the most historically significant sake brewing rice varieties from Hokkaido, known for its rich umami flavor. "Maruta" is a Tokubetsu Junmai sake that emphasizes the qualities of Ginpu, bringing out the full umami of the rice. It has a smooth texture and a distinct rice sweetness, reminiscent of eating mochi, with an overwhelming presence that fills the heart. It pairs well with sashimi when chilled, but we recommend enjoying it warm with grilled chicken or other meat dishes. This is a high-quality sake that offers a satisfying experience.
Kunimare Tokubetsu Junmai Sake

Kunimare Tokubetsu Junmai Sake is crafted by Kunimare Sake Brewery, located in Mashike Town, Hokkaido, near Rumoi City. Mashike is a fishing town overlooking the Sea of Japan. This sake has a rich history, having been cherished by the seafaring men of the area since the Meiji era (1868-1912). The Mashike mountain range, which stretches through the town, provides pristine water that forms clear streams and contributes to the pure underground water of the Shokanbetsu River, used in brewing Kunimare sake. Although it is a junmai sake, it has a crisp, dry taste and a refreshing finish that allows you to directly appreciate the purity of the water and the rich flavor of the rice. It pairs excellently with simple dishes like grilled squid or salt-grilled fish, enhancing the flavors of both.

Tosatsuru, a sake beloved by the people of Kochi Prefecture, is a staple that can be conveniently purchased at convenience stores in the region, especially in the form of cup sake. As someone who frequently enjoys cup sake due to its convenient size, I would like to share my review of the Tosatsuru Sawayaka Cup. True to the character of Kochi's sake, it has a dry taste profile. Upon tasting, you'll notice a fruity acidity on the palate. While the rice flavor isn't particularly strong, its light and refreshing nature makes it a great accompaniment to meals, and it's also delightful on its own. Personally, I often enjoy it as a "nurukan" (a slightly warmed sake) by heating it in a 500-watt microwave, which pairs well with meals. Appetizers tend to be served cold, and I find that this sake doesn't pair as well with cold dishes when served chilled. However, when enjoyed as a nurukan, it complements cold appetizers nicely, and as the temperature cools, it pairs perfectly with warm main dishes. This sake is a standard choice in Kochi, a region known for its love of sake, and is easily accessible at local convenience stores.
Zaku Naguwashi Junmai Daiginjo Tojo Yamada Nishiki

Kokuryu Daiginjo is a very well-balanced sake. It has a clear appearance without any yellowish tint. While it doesn't have a thick texture, it isn't too thin either, providing a perfect mouthfeel. The aroma and flavor are well-linked, offering a refreshing fruity taste of green apples. As the temperature rises, it gains a slight mellowness and a hint of bitterness in the aftertaste, showcasing the dignified character of a Daiginjo. It pairs well not only with raw fish but also with grilled mushrooms that have a slightly roasted aroma.
Tsukino Katsura Junmaishu
A Drop of Kyoto That Even First-Timers Can Enjoy
The renowned sake from Kyoto, "Tsukino Katsura Junmaishu," is characterized by its gentle flavor, making it perfect for those new to Japanese sake.
