Suigei Junmai Ginjo Ginrei was the first product released by Suigei Brewery when they began selling ginjo sake in earnest, and it remains a flagship product to this day. It is made using 100% “Ginpu,” a premium sake rice from Hokkaido, polished to a 50% ratio. The brewing water is sourced from the pristine springs of the Kagami River in Kochi Prefecture, and traditional Kumamoto yeast is used. With state-of-the-art brewing facilities and meticulous quality control through in-house rice polishing, the sake is brewed in small batches and undergoes slow, low-temperature fermentation to maximize the natural flavors of the ingredients.
