The Allure of Masumi Junmai Ginjo Karakuchi Ki-ippon
Masumi Junmai Ginjo Karakuchi Ki-ippon is a masterpiece from the renowned Miyazaka Brewing Company in Nagano Prefecture, Japan. This sake is crafted by a historic brewery in Kamisuwa, often referred to as the “Switzerland of the East,” where the first Ginjo yeast, No. 7, was developed. The “Black Label” has been refined over time to achieve a clear and balanced dry taste, earning the love of many sake enthusiasts. Made with carefully selected rice such as “Miyama Nishiki” and “Yamae Nishiki” from Nagano Prefecture, and “Yamada Nishiki” from the Yamaguni area in Kato City, Hyogo Prefecture, this sake is polished to a 55% rice milling rate, making it a true masterpiece of the brewery.
Fruity Aroma and Exquisite Balance of Dryness
When poured into a glass, it releases a fruity aroma reminiscent of apple nectar and white peach. Upon tasting, a gentle sweetness spreads across the palate, followed by a pleasant bitterness from mid to late palate, leading to a crisp and clean finish. The harmonious blend of floral aroma and dry taste captivates the drinker. With a sake meter value of +5 and an acidity of 1.4, it offers a dry yet soft flavor that complements a variety of dishes.
Recommended Serving and Food Pairings
Masumi Junmai Ginjo Karakuchi Ki-ippon is best enjoyed chilled or at room temperature. It pairs exceptionally well with mountain vegetable dishes, vegetable dishes, and fish dishes with a hint of bitterness. The fruity aroma enhances dishes like simmered clams in sushi or grilled chicken thigh with a squeeze of citrus or a touch of yuzu pepper, highlighting the unique flavors of the ingredients. It also pairs well with asparagus ohitashi, grapefruit and smoked salmon salad, and herb-infused dishes. It is recommended to store it in a cool, dark place, and once opened, keep it refrigerated.

A masterpiece of soft dry sake that enhances the flavors of your dishes.
I started drinking Masumi Junmai Ginjo Karakuchi Ki-ippon after visiting Miyasaka Brewing Company for work. In front of their office, there's an impressive brewery shop where I was able to purchase sake and items like tableware as souvenirs. Masumi Junmai Ginjo Karakuchi Ki-ippon is characterized by its crisp and dry taste, which enhances the flavors of dishes. It pairs exceptionally well with mountain vegetables, vegetable dishes, and ayu (sweetfish). This sake is made using the No. 7 yeast, nurtured by the pure water and cool climate of Suwa in the Shinshu region. Its versatility in being enjoyable at any temperature is also a notable attraction.
